Easy Mexican Casserole Recipe

This Easy Mexican Casserole Recipe is such a simple and hearty meal. I love that this reminds me so much of eating a taco or a burrito but in casserole form instead.

If you’re looking for a new spin for dinner, I highly recommend giving this taco casserole dish a try. We’ve made it several times and while it’s big enough to feed a family, I love having leftovers for the next few days.  It’s also one of those recipes any level of cook can make, then enjoy the leftovers as lunch.

Easy Mexican Casserole Recipe

In less than an hour of time, this casserole will be hot and ready to eat. Sitting around the table and eating casserole just gives me a nice and warm feeling in my tummy. I love having comfort food any time of the year and this easy casserole dish is always at the top of my list. 

It’s fast and easy to make and I think you’ll really love the flavor, too! 

Ingredients needed to make Mexican Casserole

  • 1 lb ground beef or turkey
  • 2 cups of your favorite salsa
  • 1 can chili beans, drained
  • 3 cups tortilla chips, crushed, colored chips adds  variety
  • 2 cups sour cream
  • 1 – 2oz can black olives, sliced – optional
  • ½ cup green onion, chopped
  • ½ cup tomato, chopped – I like Roma’s
  • 2 cups cheddar or Mexican blend cheese

How to make Easy Mexican Casserole Recipe

Preheat oven to 350 degrees. 

Cook ground meat, drain. 

Stir in salsa and cook for about 15-20 minutes.

Add in beans and cook until hot, turn off the heat. 

Prepare a 13×9 baking dish with nonstick spray.

Evenly layer in crushed tortilla chips.

Spoon meat and bean mixture over chips.

Spread on the sour cream.

Sprinkle on olives, green onion, tomatoes.

Cover with cheese.

Bake 30-35 minutes until bubbly.

Tips & Tricks

The biggest thing to keep in mind is that you can alter this recipe and really make it your own. You can use ground beef or turkey and vary up the type of beans that you use as well. 

Shredded chicken could also be used instead of beef or turkey.  

Fun Variations to this Casserole Dish

As I mentioned above, a simple way to make this dish taste differently is to change up the ingredients that you use. I also like to vary up the type of cheese that I use as that is the fastest way to change up the flavor and taste. 

How to store leftovers

Since you’re probably going to have leftovers, you’re going to want to store this is a casserole dish with a lid. It’s a simple way to keep it fresh and delicious and perfect for the next time that you’re ready to eat it. 

Topping and side ideas

The other really great part of this simple casserole dish is that everyone can change up their piece to whatever they’d like it to taste like.
