I’m a huge fan of meatballs so this recipe is always at the top of my list. I just can’t help but crave that flavor and gravy combination. We make this a lot during the winter months but it’s so good at any time of the year. Plus, using the Crock Pot makes it a total breeze, too! 

Why do my meatballs fall apart?

If you’re noticing that your meatballs are a bit crumbly and aren’t holding together as you want, you need to make certain that you’re using the right amount of breadcrumbs. Those are what holds them all together. 

Will meatballs fall apart without breadcrumbs?

Yes, if you don’t have something as a binder in your meatballs to hold the ingredients together, they will fall apart during the cooking process. Some people also use bread that they have at home and just tear it into pieces to add to the meat mixture. 

How do you keep meatballs moist?

Nobody likes dried out meatballs so keeping them moist is key. The added egg in this recipe is the addition that helps keep the meatballs tasty and juicy. 

Why are my meatballs tough?

The easiest way to get them not to be hard and tough is to have an egg added in. This way they don’t dry out as they cook which is what is making them tough and hard. 

Crock Pot Meatballs and Gravy 

Are you ready to make this tasty dish? Gather up the ingredients and follow the directions below. 

For the Meatballs: 

  •  2 Pounds Ground Beef
  • 1 Large Egg
  • 1 tsp Salt
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Pepper – optional
  • 1 C Breadcrumbs

For the Gravy:

  • 3 Cups Beef Broth
  • 2 (1 Ounce) Packages Brown Gravy Mix
  • 1 Tbsp Ketchup
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1/2 tsp Salt
  • 1/2 tsp Pepper – optional
  • 2 Tbsp Water
  • 2 Tbsp Cornstarch
  • 1 Tbsp Olive Oil

How to Make Crock Pot Meatballs

In a mixing bowl, combine beef, egg, salt, garlic powder, onion powder, pepper, and breadcrumbs.

Form the beef mixture into Tablespoon sized meatballs.

In a large skillet, heat with olive oil and brown meatballs.

Place meatballs in crockpot.

In a mixing bowl whisk together the beef broth, gravy mix, ketchup, salt, pepper, onion powder & garlic.

Pour mixture over meatballs.

Cook on low for 6 hours.

Once cooked, remove the meatballs from the crockpot and set aside.

Turn crockpot up to high.

Mix together the cold water and cornstarch in a small bowl then whisk the cornstarch mixture into the broth for 1-2 minutes until thickened.

Return the meatballs to the crockpot and cook for an additional 20-30 minutes.

Serve over rice or noodles and enjoy!

Think about these even as an appetizer.  Set out toothpicks and serve direct from the Crock Pot.
