Frozen Treats, Not Ice Cream, In Five Minutes

Summer is almost here, but admit it, itโ€™s always time for a frozen treat, even if itโ€™s not ice cream.  What better way to cool down than with a couple of frozen treats made in five minutes or less. Frozen fruit is the key to these treats whether you buy frozen fruit or freeze your own.

 

A little note if you are going to freeze your own. The fruit should be at their peak of ripeness. Most fruit which isnโ€™t ripened enough, hasnโ€™t developed all of their sweetness yet.

 

Both of these start out as a great base which can be customized to your own liking. Before the final freezing, think about extra things to stir in. Some favorites include mini-chocolate chips, chopped nuts, chopped fruit, or a swirl of chocolate or caramel sauce.

Whenever I try a new recipe, especially where you are adding sugar or a sweetener, I make the recipe as it is written the first time then adjust to my liking. I am a bit more of a tart taste than an overly sweet.

Banana Frozen Yogurt

6 medium ripe bananas
1 1โ„2 cups Greek yogurt
1โ„4 cup honey

Peel and slice bananas to 1โ€ณ chunks.

Place on parchment paper and freeze in a single layer until solid โ€“ at least 2 hours.

To prepare:

Combine frozen bananas, yogurt and honey into food processor. 

Blend until smooth.  This will depend on size and power of your food processor, but usually 3 โ€“ 4 minutes.

 

Pour this mixture into a bowl and freeze until firm, about 3 โ€“ 4 hours.  It is fairly soft after blending.

 

Scoop and serve.

Notes:

Think about adding in other ingredients before final freeze.

Great add ins to try are mini-chocolate chips, chopped nuts, or chopped fruit.

A great chocolate sauce over this would just add more deliciousness.

I like usually vanilla flavored Greek yogurt as it seems to add just a little more flavor.

Freeze your over ripe bananas for this or smoothies instead of tossing them.

 

 

Strawberry Frozen Yogurt

4 cups frozen strawberries

3 Tablespoons honey

1/2 cup Greek yogurt

1 Tablespoon fresh lemon juice

Place all ingredients into food processor and blend until smooth.

This will depend on size and power of your food processor, but usually 3 โ€“ 4 minutes.

Pour this mixture into a bowl and freeze until firm, about 3 โ€“ 4 hours.  It is fairly soft after blending.

Scoop and serve.

Notes:

Mixtures of fruits are great too, just make it about 4 cups total and make sure all fruit is frozen.

Blueberries with strawberries is one of my favorites.

What about peaches?  Itโ€™s almost peach season around here.

Frozen mixed fruit is good too โ€“ tropical blends are easily found.

I like usually vanilla flavored Greek yogurt as it seems to add just a little more flavor.

I love the simplicity of these recipes โ€“ easy to make and so quick too.
