Cast Iron Skillet Coffee Cake Recipe

This is a sweet and easy coffee cake recipe that doesn’t have any fruit added to it at all. I have to point that out because I think that is one part that makes it unique.  Add a cup of fresh fruit on the side if you like.

The other fun part of this simple recipe is that it uses a cast iron skillet. It’s an easy kitchen tool that creates a hot skillet and an even layer of cooking heat to make this the perfect golden brown coffee cake. 

What makes coffee cake different from cake?

There are a few differences between the two. The first is that most coffee cakes will have some sort of sugar topping or crumble on top, while a cake will have frosting. 

The second is that I think a coffee cake has a little bit more of a dense texture, while a cake is light and fluffy.

Why is my coffee cake batter so thick?

Don’t stress. The coffee cake batter is going to be a bit more thicker than you might be used to. This isn’t anything to be worried about.

As long as you’ve measured correctly, the cake batter cooks just fine in the skillet. 

Can I add fruit to this coffee cake? 

You can. Adding fresh fruit can turn this into a delicious blueberry coffee cake recipe or strawberry coffee cake recipe. Just fold the fruit into the cake batter, and be careful not to expel a ton of juice into the cake mix.  Make sure the fruit is very dry as the juices could change the consistency of the batter.

Ingredients for this Easy Cast Iron Skillet Coffee Cake 

 

Cake Ingredients:

  • 2 ½ cups all purpose flour 
  • 1 cup brown sugar, packed 
  • ¾ cup plain Greek yogurt 
  • ½ cup butter, softened 
  • 2 eggs 
  • 2 tsp baking powder 
  • ½ tsp baking soda 
  • 1 tsp vanilla extract  

Topping Ingredients:

  • ¾ cup brown sugar, packed 
  • ½ cup flour 
  • 6 tbsp butter, firm 
  • 2 tsp cinnamon 

How to make Coffee Cake in a Cast Iron Skillet

  • Preheat the oven to 350° F. 
  • Add butter to the cast iron skillet. 
  • In a bowl, whisk the baking powder, flour, and baking soda and set the bowl aside. 
  • Using a mixer, beat the butter and brown sugar in a different bowl until it is light and fluffy. Add the eggs one at a time to this mixture and beat well after adding each one. 
  • Beat in the vanilla.
  • Turn the mixer to low and beat in 1/2 of the flour mixture. Add the yogurt and mix well. 
  • Add the rest of the flour mixture and combine well. 
  • The batter will be thick – remember that! 
  • Spread the batter into the prepared skillet and then set it aside.
  • To make the topping, mix the flour, brown sugar, and cinnamon.
  • Add firm butter and use a fork or pastry cutter to make small crumbles. Sprinkle this topping over the cake batter.
  • Put the skillet in the oven and bake for 35-40 minutes. Check the baking progress with a toothpick at 30-35 minutes. 
  • You can serve this warm or cooled. 

How to Store Leftovers

Be sure to let the coffee cake cool completely and store any leftovers in an airtight container with a lid. It should stay fresh up to four days, if it actually lasts that long in your home.  It doesn’t in mine. 

You can easily reheat in the oven or in the microwave to enjoy it warm!
