It’s an easy way to get that delicious pumpkin fall flavor with the texture of French Toast. This is a perfect fall morning breakfast idea that will have your taste buds craving more.

Baked Pumpkin French Toast In A Cast Iron Skillet

I love that this easy French Toast recipe uses both pumpkin pie spice as well as pumpkin puree. This means that literally, every single bite has pumpkin flavor! 

Using a French baguette is also a great tip because it’s a tough enough bread that it doesn’t fall apart when it gets soggy. I like a bit of chew with my French Toast so a baguette loaf is always my go-to. 

Can you use other types of bread for French Toast?

Of course. This recipe will work with any type of bread. Just make certain that if it’s in loaf form, that you cut the pieces of bread thick enough so that they won’t get soggy and fall apart. If it’s fresh, after you slice it, let it set out a couple of hours to dry out a bit before making your French Toast.

All you need to get started are the simple ingredients listed below!

Ingredients needed to make Baked Pumpkin French Toast Skillet 

  • 1 French baguette
  • 3 eggs
  • 1 cup milk
  • ¼ cup heavy cream
  • ½ cup pumpkin puree
  • ½ cup granulated sugar
  • ½ tsp pumpkin pie spice
  • 1 T butter

How to make Pumpkin French Toast

Preheat the oven to 350 degrees.

Lightly grease your skillet with a little butter, about 1 Tablespoon.

Cut bread into one-inch slices, then cut each slice in half.

Arrange in the bottom of a  12” cast iron skillet.

Add all of the other ingredients to a large bowl and whisk until the eggs are fully beaten, and you have a liquid mixture.

Pour mixture over bread.

Put the skillet on the middle rack in the oven and bake for 25-30 minutes, or until the top is golden brown.

Remove from the oven, and sprinkle powdered sugar over the top, if desired, and serve warm with syrup.

What toppings go well on French Toast?

I’m all about the toppings! I love powdered sugar and warm maple syrup on top of mine but you can easily change that up to whatever you crave and love. If you haven’t tried REAL maple syrup, please do so.  It’s got such a richer taste.

Other fun topping ideas include:

  • whipped cream
  • chocolate chips
  • chocolate shavings
  • fresh fruit 
  • sprinkling of cinnamon

Some people prefer to have their French Toast be a breakfast food while others like to have it resemble more of a dessert. With a variety of toppings, you can easily do either one.

This is one super simple and delicious way to cook up french toast!

You know my favorite cast iron is LODGE CAST IRON.  Not only is it a great product, but I consider it locally made, just about 45 minutes outside of Chattanooga.

Or a thought, how cute would this be in individual 3.5″ skillets.  This recipe would probably make 4.  Next time I will try it and let you know.
