This Easy Mexican Casserole Recipe is such a simple and hearty meal. I love that this reminds me so much of eating a taco or a burrito but in casserole form instead.

Ingredients needed to make Mexican Casserole
- 1 lb ground beef or turkey
- 2 cups of your favorite salsa
- 1 can chili beans, drained
- 3 cups tortilla chips, crushed, colored chips adds variety
- 2 cups sour cream
- 1 โ 2oz can black olives, sliced โ optional
- ยฝ cup green onion, chopped
- ยฝ cup tomato, chopped โ I like Romaโs
- 2 cups cheddar or Mexican blend cheese
How to make Easy Mexican Casserole Recipe
Preheat oven to 350 degrees.
Cook ground meat, drain.
Stir in salsa and cook for about 15-20 minutes.
Add in beans and cook until hot, turn off the heat.
Prepare a 13ร9 baking dish with nonstick spray.
Evenly layer in crushed tortilla chips.
Spoon meat and bean mixture over chips.
Spread on the sour cream.
Sprinkle on olives, green onion, tomatoes.
Cover with cheese.
Bake 30-35 minutes until bubbly.
Serve and enjoy!
