Slow Cooker Cajun Shredded Beef with Cheesy Grits

I know that grits are considered a southern food and we eat them all the time. If you’ve never had grits, now is the perfect time to try them! There’s nothing better than a side dish of grits piled high with cheese! 

What are grits made out of?

If you’re new to the world of grits, welcome! And don’t be alarmed. Grits are really just dried corn that is ground up a bit that then becomes thicker once you add in a liquid.

It’s comparable in texture to thick gravy or even a texture like oatmeal. 

What do grits taste like?

Well, they really take on the flavor of what you’re cooking them with. Since these will be covered in cheese, they’re going to taste a lot like cheese!

Are you ready to learn how to cook up this delicious slow cooker beef recipe? 

Ingredients to Make Crockpot Shredded Beef

  • 3 lb roast or stew meat
  • 3 bell peppers, chopped – I used red, yellow, and green
  • 1 onion, chopped
  • 3 stalks celery, chopped
  • 3 tablespoons garlic, minced
  • 1 14.5oz can diced tomatoes
  • ¼ cup tomato paste
  • 1 tablespoon creole or cajun seasoning
  • Instant grits
  • 1 cup sharp cheddar cheese
  • Parsley for garnish

How To Cook Grits and Beef in the Slow Cooker

Gather your ingredients

Sprinkle the meat with the seasoning.

In a large bowl mix together the peppers, onion, celery, garlic, tomatoes, and tomato paste until well combined.

Pour half of the veggie mixture into the slow cooker.

Place the meat on top.

Cover meat with the remaining veggie mixture.

Cover and cook on low 5-6 hours until beef is fall-apart tender.

Remove the meat to shred then return to slow cooker.

Prepare the grits per package instructions for the number of servings you need.

Stir the cheese into cooked grits.

Serve shredded beef over cheesy grits and enjoy!

This slow cooker recipe isn’t hard to do and the steps make it simple to prep and have waiting for you at the end of the day! This is one of my favorite beef recipes that never lets me down. 

What is the easiest way to shred meat?

I like to use two forks and just pull the meat apart that way. Once the slow cooker is done cooking it, it should be nice and tender to where it’s an easy process. 

Tips for Making Slow Cooker Beef and Grits 

Make certain that you’re using Instant Grits so that they cook quickly. Regular grits won’t cook up properly and will alter the outcome and flavor. 

Feel free to mix up the type of veggies that you use in this recipe. I tend to add in whatever I can get at the store that is on sale, but it’s entirely up to you. The more veggies, the better!
