The key to a great muffin is to find one that has the perfect balance of softness and moistness. And these easy banana muffins knock that requirement out of the park. I love baking up a batch of these and enjoying them with a great cup of coffee or eating one after dinner as a nice little treat.

Can you use unripened bananas for this recipe?

You can but ripened bananas are the best. They’ll mash easier and just tend to have a much more sweeter taste and flavor. Plus, let’s be honest…we probably all have a few ripe bananas just sitting around on the corner, begging to be used. 

How do I know when my muffins are done cooking in the oven?

Once the timer goes off, take a toothpick and stick it into the middle of a muffin. If the toothpick comes out clean, they’re done and ready to be pulled. If the toothpick has some batter on it still, they’re going to need a tad bit more baking time.

Ingredients needed to make banana nut muffins 

  • 3 bananas, mashed 
  • ¼ C unsalted butter, melted
  • ¼ C whole milk
  • 1 large egg
  • 1 tsp vanilla
  • ½ C brown sugar
  • ½ C sugar
  • 2 C all-purpose flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 C walnuts, chopped + extra to top muffins before baking, if desired

Supplies Needed:

  • Mixing Bowl
  • Non-stick cooking spray 
  • Muffin pan

How to make banana nut muffins

Preheat oven to 350°F. Spray a standard muffin tin with non-stick cooking spray and set aside. 

Add the mashed bananas, melted butter, and milk to a large mixing bowl. Mix to combine. 

Beat in the egg and vanilla, and brown sugar.

Add in the remaining dry ingredients and fold in until just mixed. Then, fold in the walnuts.

Fill muffin pan cups to about 2/3 full. Top with additional walnuts, if desired.

Place in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted in the center of a muffin comes out clean. Remove from oven and cool for at least 5-10 minutes before serving. Enjoy!
