There’s just something about the deliciousness of Gingerbread Muffins that truly make a holiday treat. Imagine baking these beauties in the morning and waking up everyone in the house with the smell? Sounds like a simple plan that you can totally make happen. 

Gingerbread is a well loved flavor during the holidays.  Most think of cookies or making a house, but many don’t think of muffins.

And if you prefer to add a little sweetness to the tops of these muffins, you can always add a brown sugar crumble to the top or a powdered sugar drizzle.  Who says you have to choose? You can have some as the recipe below states, make a few with a sweet crumble topping, and then drizzle the rest with a little bit of powdered sugar. Yes…you can have it all!

INGREDIENTS NEEDED FOR EASY GINGERBREAD MUFFINS

  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground ginger
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup molasses
  • 1/4 cup brown sugar
  • 1/3 cup milk
  • 1/3 cup oil
  • 1 egg
 

HOW TO MAKE HOMEMADE GINGERBREAD MUFFINS

Preheat oven to 375 for dark pans and 400 for silver pans.
 
Spray a 12 cup muffin tin with nonstick cooking spray and set aside. Cupcake liners could also be used.  
 
In a small bowl, combine flour, baking powder, ginger, baking soda, cinnamon, and salt. Mix well and set aside. 
 
In a mixing bowl, add molasses, brown sugar, milk, and oil and mix well. Add egg and mix well. Stir in flour mixture until combined well.

Use a medium size scoop and scoop batter into muffin tins.

Bake for 15 – 18 minutes or until the center is set when a toothpick is inserted in the center. Cool for 5 minutes in the pan before removing from pan and cooling on a cooling rack.

Cook Time 18 minutes
Total Time 28 minutes

Ingredients
