There are many ways you can use cream cheese. Today I’m showing you how to make cream cheese pancakes. Using just 8 ounces of cream cheese, 6 eggs, and vanilla extract you’ll whip up a homemade pancake batter using the high speed on your blender.

Cream cheese pancakes are more flavorful than regular pancakes and taste creamier than even the most famous buttermilk pancake recipes. This delightful taste will quickly become your favorite way to make homemade pancakes with fresh berries for your whole family.

 

Can I have cream cheese on keto?

Many people who are on keto enjoy making cream cheese pancakes due to the low carb and high-fat content. Cream cheese is one of the few spreadable cheese options you can enjoy when you’re on keto. While this recipe may not be 100% keto-friendly, you can review the ingredients below to ensure that you’re able to enjoy these cream cheese pancakes with fresh berries on your specific diet.

Can you make pancakes on a cast iron griddle?

Yes, you can make pancakes on a cast iron griddle. These homemade cream cheese pancakes with fresh berries can be cooked on a cast-iron griddle or nonstick skillet. For best results, heat the cast-iron griddle before dropping your cream cheese pancake batter on the preheated griddle or skillet.

When your pancakes start to turn brown on the edges, it’s time to flip them and continue cooking. Your pancakes should take 3-4 minutes per side, as long as you’ve preheated your griddle or skillet properly.

Why do my pancakes stick to the griddle?

If you find that your pancakes are sticking to the griddle, you may need to season your cast-iron griddle again once you’re done using it with this recipe. A nonstick skillet may have pancakes sticking due to the utensil you’re using. Never use a metal utensil such as a metal spatula when cooking these cream cheese pancakes with fresh berries, to reduce the risk of your pancakes sticking to the griddle.

There’s something magical that happens when you sit down to breakfast with your family and serve these homemade cream cheese pancakes, everyone is smiling and shocked that cream cheese pancakes are so delicious! You can opt to pour your favorite maple syrup over the top of your homemade pancakes with fresh berries or just enjoy this delightful dish sans-syrup.

Just a few ingredients and simple directions:

Gather your ingredients – cut cream cheese into chunks

Place ingredients in blender and blend

Preheat griddle, add oil

Small pancakes, use 2 – 3 Tablespoon Mix

Cream Cheese Pancakes with Fresh Berries

Ingredients: 

  • 8 oz. cream cheese, softened and cut into cubes
  • 6 large eggs
  • ½ tsp ground cinnamon
  • 1 tsp real vanilla extract
  • 3 Tbsp extra virgin olive oil, divided
  • 1 C fresh blueberries
  • 1 C fresh strawberries, sliced
  • 2 Tbsp powdered monk fruit (optional)
  • Real maple syrup, to serve

Directions: 

  1. Add cream cheese, eggs, cinnamon, and vanilla extract to a high-powered blender. Cover and blend on high until completely smooth.
  2. Heat a cast-iron griddle or large skillet over medium heat. Once hot, add ½ tablespoon olive oil to the griddle and spread around with a rubber spatula.
  3. Pour 3 small pancakes onto the griddle (approximately 2-3 tablespoons each), leaving enough space in between so they don’t run together. Cook until the edges just begin to turn brown and the pancakes are set approximately 3-4 minutes.
  4. Carefully flip each pancake and continue cooking for another 1-2 minutes or just until golden brown on the bottom. Transfer cooked pancakes to a platter and keep warm. Repeat this process with remaining olive oil until all batter is cooked.
  5. To serve, divide the pancakes among individual serving plates and top with fresh berries, a sprinkle of powdered monk fruit, if desired, and some real maple syrup.
  6. Enjoy!

A few more ideas and hints:

Traditional powdered sugar can be used instead of powdered Monk fruit

Choose from any of your favorite flavors of syrups such as blueberry

To keep extra pancakes warm, turn your oven on low to 250.  Once it’s heated, turn off.  Place oven safe dish or baking sheet in oven then stack pancakes on this while preparing remaining mixture
