Corned Beef Brisket & Cabbage Made In The Slow Cooker

Everyone knows that corned beef and cabbage is a must during the month of March. But in my house, I tend to make up this simple beef recipe more often than that.  

There’s just something so delicious about the spices and cabbage combined that I literally can’t help myself from eating two or three servings at once. 

I also really like to top it with a bit of horseradish as well because it adds a delicious extra kick! 

Ingredients Needed to Make Crock Pot Corned Beef

  • 4 lb corned beef brisket w/ spice packet
  • 4 large carrots, peeled & chopped 
  • 10 baby red potatoes 
  • 1 onion, chopped 
  • ½ head of cabbage, chopped rough 
  • 4 cups of water
  • Salt & Pepper to taste 

The Easiest Corned Beef and Cabbage made in the Slow Cooker

Just a few ingredients.

Place carrots, potatoes, and onion in the bottom of the slow cooker.

Pour water over vegetables.

Place brisket on top of vegetables and sprinkle on spice from the packet.

Cook on high for 8 hours.

Add in chopped cabbage and cook for an additional hour.

Remove brisket to slice and serve on top of vegetables.

Does corned beef have to be covered in water in a slow cooker?

It does need to be covered in at least an inch of water or it’s going to dry out. Even when you’re cooking it low and slow, you need to be certain that it stays moist. 

Does brisket get more tender the longer you cook it?

It actually doesn’t. People think this but it’s not the truth. Cooking your brisket needs to be timed just like any other meat or dish. If you cook it longer, there’s a chance it’s going to dry out and become tough. 

Why did my brisket turn out dry?

More than likely you cooked your brisket too long or you didn’t cover it with enough water. If your brisket does turn out dry, you can try to shred it and soak it in a broth or water to bring it back a bit.

  1. Growing up my mom made this every year! I loved it. I have high cholesterol so I wish I could eat brisket but on a strick diet ., but this seems healthy with all the vegetables.
