Slow Cooker Potatoes & Green Beans

I love cooking with my slow cooker. It’s such a simple way to set the food and forget it. If you’re anything like me, I tend to do my day in sections so that I can easily break it down and keep up. What this means is that I then can put this recipe on and not have to think about it until the timer is up and my nose is leading me to check on it.

Can you use canned green beans for this recipe?

I wouldn’t recommend it. You’re going to want fresh green beans so that they hold their shape and don’t become all mushy.

However, if you’re really craving this recipe and only have canned beans, it may be worth a try. I would add them the last couple of hours.

What type of potatoes should you use for this recipe?

This is really up to you. Some people really like the taste of red potatoes but there isn’t one type that I would recommend over the others. I tend to think that as long as you peel and halve them, any type of potato is going to work.  I also love the little fingerling potatoes but multi-color potatoes make the dish pretty too.

What meat would add the most flavor?

Any type of pork is going to go great in this recipe because it adds in a lot of salty flavors. I like to add bacon and ham as my meats of choice.

Layer green beans on top of potatoes and seasoning meat on top.

Pour in just enough water or broth to almost cover the potatoes. (Prefer chicken broth)

Cover and cook on low for 6-8 hours or until beans and potatoes are tender.

Sometimes, I will squeeze just a little fresh lemon juice on these before serving.  It adds a great, fresh taste.

How do you store leftovers?

If you have leftovers, you just need to add them to a container and put them in the fridge. This will keep it fresh until you’re ready to reheat and eat again!

How do you reheat these Slow Cooker Potatoes & Green Beans?

There are a few ways.

The first is to put the back in the crockpot and put it on low for an about an hour, depending on how many you have.

Microwave until warm.

My favorite way is to put in the oven for about 30 minutes.  This will keep the green beans a bit crisper.
