Making a Quick and Easy Tortilla Soup
Here’s how I like to make it: Find the full recipe below
Instead of water – use chicken broth. It will add a richer flavor
Add a whole can of corn – drained
Add a can of red kidney or black beans – rinsed and drained
Add chicken – usually about a cup or what you might have left over
With adding these extra ingredients, increase your liquid by ½ to 1 cup
This can be to your liking on how thick or how soupy you like it
If you like it spicier, use tomatoes with chili peppers
Don’t Forget The Toppings
And don’t forget the toppings – I would suggest some or all of these. Seriously, don’t skip the toppings.
Cheddar Cheese
Mexican Blend Cheese
Lime – a squeeze gives you a fresh flavor
Avocado slices
Cilantro
Sour Cream
Crushed Tortilla Chips
My Recipe
1 – 15 oz can diced tomatoes
6 cups chicken broth (mixture of water and broth is fine)
1 – 15 oz can whole kernel corn, drained
1 cup diced or shredded chicken (leftover rotisserie works great)
1 – 15 oz black or kidney beans, rinsed and drained
Place all items in a large soup pot or Dutch Oven
Bring to a boil
Lower the heat and simmer for 15 – 20 minutes.

Oh my goodness this makes me hungry just looking at it. Soup is a constant at our house and I’m a big cilantro fan too so I should try this with the family.
