Slow Cooker Chicken Noodle Soup

What I love about this chicken soup is that it’s a really easy recipe to make. It takes minimal ingredient and time but cooks up with a ton of flavor and taste! 

You can even vary up the ingredients a bit if you like and still have an amazing soup recipe without worry. 

Do you have to cook chicken before putting it in the slow cooker?

It’s really up to you. This recipe doesn’t have you cooking the chicken beforehand but there are some people that like to do it that way. You can easily add a bit of oil to a skillet and sear it on both sides before adding it to your slow cooker and cooking it that way. 

What can you add to chicken noodle soup to make it taste better?

It’s going to be all about the spices. I also recommend having some extra salt and pepper on hand to enhance it once it’s cooked as well. 

Can you overcook chicken in a slow cooker?

You bet. This is why it’s important to pay attention to cooking times. The good thing about this simple soup recipe is that if you do overcook it, the addition of the chicken stock will help to keep it moist.

Ingredients needed to make Crockpot Chicken Noodle Soup

  • 2 pounds boneless, skinless, chicken breast 
  • 8 cups chicken stock
  • 1 to 1 ½ cups noodles
  • 4 cloves garlic, minced 
  • 1 yellow onion, diced
  • 3 carrots, peeled & diced 
  • 3 celery stalks, diced
  • 1 teaspoon dry thyme 
  • 1 teaspoon dry rosemary 
  • 2 bay leaves 
  • Salt & Pepper to taste 
  • 1 lemon, juiced 
  • Fresh parsley

How to make Chicken Noodle Soup in the Crockpot

Place chicken in a 6-quart slow cooker.

Stir in stock, garlic, onion, carrots, celery, thyme, rosemary, and bay leaves. Add salt and pepper to taste.

Cover and cook on low for 6-8 hours.

Remove chicken and shred.

Add chicken back into the pot with the pasta and cook on low for 40 minutes or until pasta is tender.

Stir in lemon juice and parsley.

Serve immediately and enjoy!

What toppings do you serve with soup?

I like adding on crushed crackers, croutons, and even some of those delicious French Onion curls as well. 

You can also do shredded cheese or even a little bit of hot sauce if you’re wanting to make this a hotter version of the soup.
