Cranberry Orange Bread with Pecans
There are just certain flavors you think of during different seasons. So many may think of pumpkin and apples during fall but the closer to Thanksgiving it gets, I think cranberries. Going through some old recipes I found this Cranberry Orange Bread with Pecans Recipe. It was typed onto an index card. Am I dating myself?

I havenโt made it in many years so thought I would give it a shot and see if I love it as much now as I did then. And I did.
Of course, one of my favorite quick breads will always be my BUTTERY BANANA NUT BREAD but for the next couple of months, I think my Cranberry Orange Bread with Pecans Recipe will be at the top of my list.

Making This Cranberry Orange Bread with Pecans
As you read over this recipe, you might notice a little difference in this recipe than most โ something different than butter.
What you need for Cranberry Orange Bread with Pecans
Ingredients:
1 C sugar
2 ยฝ C all-purpose flour
2 t baking powder
ยฝ t baking soda
ยผ t salt
ยฝ c chopped pecans
3 T grated orange rind
2 eggs
ยพ C orange juice
ยฝ C mayonnaise
1 ยฝ C chopped cranberries ( I like to have about ยฝ C finely chopped)
2 T sugar
1 t grated orange rind
Directions:
Combine sugar, flour, baking powder, baking soda and salt in a large mixing bowl
Stir in pecans and 3 T orange rind.
Set aside.
Combine 2 T sugar and 1 t orange rind. Set aside.
Combine eggs, orange juice and mayonnaise in a small bowl. Mix well.
Stir this mixture into dry ingredients just until flour is moistened. Donโt overmix.
Fold in cranberries.
Spoon into a greased 9โ x 5โ x 3โ loaf pan.
Sprinkle the sugar and orange rind mixture on top.
Bake at 350 for 55 minutes.
Cover with foil and bake an additional 10 minutes.
Cook on wire rack.
Consider making a double batch:
This is one of those great recipes to make and freeze. Or give as gifts.
Bake in smaller loaf pans, cool completely then wrap in a couple of layers of plastic wrap and aluminum foil.
Or wrap up in treat bags for gifts.
You will need to adjust the baking time for smaller pans. Depending on the size, I would cut down by 20 minutes then check. Make a note of the changes so you will know in the future.

Notes
A few finely chopped cranberries will distribute the flavor more.
