Bacon-Wrapped Water Chestnuts with Spicy Brown Mustard

And I’m pretty much obsessed with the spicy brown mustard as well. I LOVE the saltiness and heat that it adds to this dish. Just a dab will do me, but others really love the spicy.

Bacon-Wrapped Water Chestnuts with Spicy Brown Mustard

If you’ve never tried water chestnuts, you’re missing out. I love how they give the perfect crunch every bite you take. And then when you wrap them in bacon? Holy moly, the flavor is out of this world.

While this dish is great for an appetizer, I could probably sit and enjoy it all day long as my main meal, too. With the holidays coming up, this could be an awesome choice for your family and friends. They’ll be impressed by the uniqueness and taste of this simple appetizer dish. 

Ingredients needed for Bacon-Wrapped Water Chestnuts

  • 8 strips center-cut bacon
  • 1/3 cup of gluten-free soy sauce
  • 3 Tablespoons of honey
  • 2 8-ounce cans of water chestnuts, rinsed and drained
  • ¾ cup of Greek yogurt
  • 2½ Tablespoons of Dijon mustard (or your favorite spicy brown)
  • 1 Tablespoon of hot sauce (optional)
  • ¼ teaspoon of cayenne pepper
  • 2 Tablespoons of fresh parsley, roughly chopped
  • Sea salt and black pepper

Remember all of these are to your taste.

How to make Bacon-Wrapped Water Chestnuts with Spicy Brown Mustard

Cut bacon strips in half lengthwise, then cut each thin strip into 3 equal sections for a total of 48 pieces. Set aside.

Mix soy sauce and honey in a medium mixing bowl. Add water chestnuts and turn to coat. Marinate at room temperature for approximately 30 minutes, turning water chestnuts 2-3 times during that time.

Preheat the oven to 400°F and place a metal rack inside a large, rimmed baking sheet. Spray rack with non-stick cooking spray and set aside.

Drain water chestnuts, but reserve the juice from can. Wrap each water chestnut with a piece of bacon, then repeat with a second strip on the opposite side. Secure both pieces of bacon with a toothpick and place them on the baking rack.

Repeat with remaining water chestnuts. Brush on a little of the reserved juice on all sides. Place prepared baking sheet in preheated oven for 20 minutes, then remove from oven and brush with more juice before returning to the oven for another 10-15 minutes.

While the water chestnuts are roasting, combine Greek yogurt, Dijon mustard, hot sauce, cayenne pepper, and parsley in a small bowl. Season salt and black pepper, to taste. Cover and place in the refrigerator until ready to serve.

When finished, remove the bacon-wrapped water chestnuts from the oven and serve immediately with the spicy mustard for dipping. Enjoy!
