Slow Cooker Chicken Cacciatore
I eat chicken a lot. This is because I like the flavor but because it’s also low in fat while high in protein. For this reason, I’m always looking for new chicken recipes that I can cook up to change up the flavor and taste. The good news is that this slow cooker recipe has such an awesome flavor AND comes with the option to eat some pasta, too!
Chicken and pasta perfectly seasoned? You bet. I’ll eat that time and time again.
Even though it’s easy to put off using your slow cooker except during the winter months, I really recommend that you make this hearty meal at all times of the year. You’re going to love this just as much as I do – I know it!
Ingredients needed to make this slow cooker chicken with pasta recipe
- 2 lbs chicken – your choice, I used chicken breast
- Salt & pepper
- 2 green bell peppers, chopped
- 8 oz mushrooms, sliced
- 2 cloves garlic, minced
- 1 can diced tomatoes
- ½ cup chicken broth
- 1 teaspoon oregano
- ¼ teaspoon red pepper flakes
- ⅓ cup capers
- 8 oz linguine, cooked, for serving, consider whole wheat for this
How to make Crockpot Chicken Cacciatore
Salt and pepper chicken and place in the slow cooker
Mix all remaining ingredients except capers and pasta
Pour over chicken
Cook on low 6-7 hours
Remove chicken – if using breast cut into chunks or shred, set aside
Stir in capers, return chicken
Serve over cooked pasta and enjoy!
Can you use something else besides capers?
The capers are an important part of this dish but if you’re not a fan of capers, you can use another salty method of food. Peperoncini might be a good choice if you prefer as many use these in a popular roast recipe.
I did go outside my comfort zone and included some pepper on this one and will admit, it did add flavor, along with the capers.
What kind of pasta is best?
This is completely up to you, Linguine and bow tie pasta are usually my first choices for many of my recipes, but whole wheat is a great option. Gluten Free will also work.
How do you store leftovers?
The great thing about cooking in the slow cooker is that storing leftovers are a breeze! You just need to let the food cool down and then add it to a storage container with a lid. Then place it in the fridge to keep it nice and cool.
It’s also a great dish to divide up for lunches.
To reheat, you can do a couple of different things. The quickest would be to scoop out whatever amount you’re wanting to eat and then warm it in the microwave. The other option is to put it back into the slow cooker and let it warm up that way.
Can you freeze this recipe for later?
I don’t recommend it because it has cooked pasta in it. I think that it’s better eaten fresh and is best to eat within 48 hours of being cooked.
What sides dishes go well with this chicken recipe?
Since this is already a pretty hearty meal in itself, I would stick with steamed veggies or even a nice side salad. This dish has so many strong flavors that you’re going to want to eat something mild to pair with it.
