Marinated Grilled Chicken Breasts

I love eating chicken. What I find so great about chicken is that it’s a super simple meat that can take on so many different flavors. The more that I can grill, the more I like chicken. This recipe is unique in the fact that it has fresh lime juice as well as lime zest. It’s not often that you get a chicken meal full of so much citrus flavor and taste!

This is why I love to make this for the summer months. I’ll even cut it down into shredded pieces and it makes an amazing chicken taco recipe, too. 

Can you marinate chicken for too long?

This is what you have to be aware of when you’re marinating chicken. It does an excellent job of taking on the flavor of the ingredients but there can be too much flavor that it takes on as well. 

How do you know when chicken is done cooking on the grill?

You need to use a meat thermometer to find out the internal temperature. Once the internal cooking temperature of the chicken is 165 degrees, that is your signal that it’s done and ready to be pulled. 

I highly recommend a meat thermometer for readings so that you’re accurate and not taking a chance of eating undercooked chicken.

Ingredients to make Grilled chicken with fresh lime juice

Just gather up the list of simple ingredients to get started. 

  • 2 T. extra virgin olive oil
  • ½ c. apple cider vinegar
  • 2 T. fresh lime juice
  • 2 t. lime zest
  • 2 T. fresh oregano leaves
  • 2 sprigs of fresh rosemary leaves
  • 3 large garlic cloves, crushed and peeled
  • 1 t. sea salt
  • 4 8-oz. boneless, skinless chicken breasts

How to make Marinated Grilled Chicken

To prepare the marinade, add the olive oil, vinegar, lime juice and zest, oregano, rosemary, garlic, and salt to a large bowl and whisk to combine.

Add chicken breasts to a 1-gallon sealable freezer bag and pour marinade mixture over top.

Seal bag and turn to coat breasts thoroughly. Place the bag in the refrigerator to marinate for at least 1 hour up to 6 hours.

Turn the bag a couple of times to evenly distribute the marinade during this time.

Remove chicken from the refrigerator and discard excess marinade.

Grill the breasts over medium direct heat, turning once, for 10-12 minutes total. The internal temperature should be 165.
Remove from heat and rest for 5 minutes before serving with your choice of sides.

Absolutely! If you find that you have leftovers of this simple chicken recipe, put it in the freezer for later! Just use a freezer-safe bag or container to keep it out of the cold air.
