Slow Cooker Pineapple Cake with Coconut

It’s no secret that I like to use my crock pot for anything and everything that I can. I do this for several reasons but the main one is that it always makes recipes turn out great. 

I also really love the fact that I can set the crock pot to cook the food and return hours later and have it pretty much waiting and ready to go. It’s almost like I have an assistant in the kitchen, which is something that we all dream of having, right?! 

How do you keep food from sticking to the inside of the crockpot?

That’s the biggest issue that people tend to have when cooking in the slow cooker is that the food sticks. To combat this, spray with a nonstick cooking spray or use a crockpot liner as well.

Either of these options are perfect for preventing the food from sticking and can save you such a hassle when it comes to cleaning up the mess. 

Ingredients needed for Crockpot Pineapple Cake

Cake:

  • 1 yellow cake mix
  • 1 cup water
  • 3 eggs
  • 1 stick butter, melted
  • 20 oz can crushed pineapple – divided, 1 cup drained for cake mix, remaining for glaze
  • 1 cup coconut
  • ¼ cup pecans, chopped

Glaze:

  • 1 ½ cups powdered sugar
  • Reserved pineapple and juice
  • ½ stick butter, melted
  • ½ cup coconut
  • ¼ cup pecans, chopped

How to Make Pineapple Cake with a Cake Mix

In a bowl stir all cake ingredients just until they come together.

Prepare slow cooker with nonstick spray.

Pour batter in slow cooker.

Cover and cook on high for 2 hours, DO NOT REMOVE LID during cooking.

When done, turn off slow cooker.

Whisk all glaze ingredients together until well combined.

Pour glaze over warm cake.

Let sit for 5-10 minutes.

Spoon into bowls and garnish with more coconut & pecans and ice cream or cool whip if desired.

Can you use fresh pineapple for this cake recipe?

You can, if you have a super sweet and fresh pineapple that you want to use. I just like to use canned pineapple because it’s fast, easy, and saves me time. Just make certain that you save the pineapple juice so that you can then use it in the glaze. 

Also, I have canned pineapple in my pantry at almost all time, and all of the other ingredients too.  No trip to buy groceries is needed.

Topping Ideas for Pineapple Cake

While I’m pretty certain that I think that this cake is already perfect, you can always mix up the toppings on this cake to see what you think. 

If you decide that you want to use a frosting for this cake recipe, just be certain to let it cool down all the way before adding. You can then top with shredded coconut, crushed nuts, or any other items that you want. You can really have fun mixing and matching the flavors for this fun cake recipe. 

If you do want a little something more, consider fresh whipped cream or your favorite vanilla ice cream too.

How to store leftover cake

The biggest thing to keep in mind with this cake recipe is that you need to store it in a container to keep it moist. Also be certain to let it cool down all the way before you put it into a storage container or you’ll wind up with extra moisture that will then turn the cake soggy. 

Perfect Cake To Go

As you may start planning more outings with family or weekend BBQs, this is perfect.  Just carry the cooked cake with you to your event, and it’s ready.

A little hint while baking – place a thin towel under the lid.  It keeps extra moisture from dripping down on the cake.

  1. I love my slow cooker too. It’s just so convenient and I’m always on the lookout for new recipes to try, especially if they’re easy. And your pineapple cake looks so yummy and moist. Sadly, baking has never been one of my strong points.
