Slow Cooker White Chicken Chili Will Warm Your Bones

This slow cooker white chicken chili will warm your bones on a cold evening during the year. With just a few ingredients and 4-8 hours, you’ll soon have a slow-cooked meal that the whole family enjoys!

My slow cooker white chili recipe features loads of seasonings along with veggies to complete a flavorful batch of slow cooker chili using white chicken. I enjoy serving white chicken chili on occasion as it’s a different flavor than what you’d expect with beef chili. Offering a unique flavor for mealtime during the cold days of fall and winter truly helps make the season brighter! 

How do you thicken white chicken chili?

While your slow cooker is busy making your white chicken chili, you may find that the texture is a bit thin upon completion. Have no worries! If you’re looking to thicken white chicken chili, then you can add about 1 T of cornstarch with chicken broth into your chili to help thicken it. 

What do you eat with white chili?

As you start to plan your meals for the week, you may be looking at this slow cooker white chicken chili and wondering what to make with it. There are many things that you can eat with white chili. Here are just a few of my general ideas of what to serve with my slow cooker white chicken chili:

  • Cheesy Potato Skins or Loaded Baked Potatoes
  • Corn Bread, Garlic Bread, or French Bread
  • Coleslaw 
  • Greek Salad
  • Mexican Rice, White Rice, or Brown Rice

Of course, there are many other sides you can serve to eat with white chili, but those are some of my favorite ideas to serve with this delicious slow cooker white chicken chili. 

Is white chili real chili?

Many people have asked if white chili is real chili, and the simple answer is that of course, this is real chili! Red chili is generally made with beef, tomatoes, and darker beans. White chili is often made with chicken, usually white beans, and added flavor from mild green chilies. Whether you’re craving for a beef chili that’s generally red in appearance or white chili is really all that matters when it comes to white chili versus red chili. 

White chili and red chili do have varying flavors, textures, and colors but ultimately provide you with one of the best ways to keep your bones warm during the cold season of the year! 

Ingredients for Slow Cooker White Chicken Chili

  • 3 15-oz cans Great Northern beans, divided
  • 1/3 C water
  • 1½ lbs boneless, skinless chicken breasts, cut into chunks
  • ½ small red onion, diced
  • 3-4 cloves garlic, chopped
  • 1 4-oz. can mild green chilies
  • 1 T. ground cumin
  • 2 t. chili powder
  • 1 t. Mexican oregano
  • 1 t. ground coriander
  • ½ t. chipotle pepper powder
  • 3 C chicken broth, preferably organic
  • Sea salt, to taste
  • 1½ C Mexican blend cheese, finely shredded, divided

To Serve, Optional

  • ¼ C fresh cilantro, chopped
  • 1 small avocado, diced
  • 1 medium jalapeño pepper, sliced
  • 2 large limes, cut into wedges

Directions to Make Slow Cooker White Chicken Chili

Drain and rinse the beans to remove excess salt. Place half the beans in a blender or food processor with some water and process until blended, but still slightly chunky. Transfer the puréed beans to a 5 or 6-quart slower cooker, along with the remaining whole beans.

Add chicken, red onion, garlic, green chilies, cumin, chili powder, Mexican oregano, coriander, chipotle pepper powder, and chicken broth to the slow cooker. Season with salt, as desired, and stir to combine. Cover and set cook time to 4 hours on high or
8 hours on low.

When cook time is complete, remove lid and add 1 cup of the shredded cheese and stir to combine. Cover and allow cheese to melt for 1-2 minutes.

Taste and adjust seasonings, as desired. Serve immediately with remaining Mexican cheese, fresh cilantro, avocado, jalapeño slices, and/or lime wedges, if desired. Enjoy!

This delicious slow cooker white chicken chili is made in record time and packed with flavor to warm your bones when the weather gets cold.

Prep Time 15 minutes
Cook Time 4 hours
Total Time 4 hours 15 minutes

Ingredients
