Slow Cooker Sweet and Sour Chicken

I’m a huge fan of using my crockpot quite often. This is because it gives me the freedom to add in the food ingredients and come back within a few hours to a hearty and delicious meal. 

And while I appreciate my Instant Pot and other kitchen appliances, I feel as though my slow cooker is one that will remain at the top of my favorites list. It’s just too easy to use and cooks up the perfect variety of food, no matter what. 

I also love that using a crockpot is a great way to have a one-pot meal that requires minimal cleanup as well. Because no one likes to have to spend hours cleaning up a recipe when their tummy is full and they just want to sit down and relax.

Ingredients needed to make Sweet and Sour Chicken in the Slow Cooker

  • 1 ½ lbs boneless chicken breast 
  • 2 carrots, chunks 
  • 1 red pepper, chunks
  • 1 yellow pepper, chunks
  • 1 onion, chunks 
  • 8 oz pineapple chunks, drained, reserving juice
  • 2 tablespoons cornstarch 

Garnish:

  • 2 tablespoons green onion, chopped 
  • 2 teaspoons sesame seeds 

Sauce:

  • ¼ cup soy sauce 
  • 2 tablespoons honey 
  • 2 tablespoons Worcestershire sauce 
  • 1 tablespoon white wine vinegar 
  • 1 tablespoon tomato paste 
  • 1 tablespoon garlic, minced 
  • 1 tablespoon ginger
  • 2 teaspoons chili paste 

 

How to Make Slow Cooker Sweet and Sour Chicken 

Place chicken and veggies in the slow cooker

In a small bowl whisk together sauce ingredients and pour over chicken

Cook on low for 4 hours

 

Remove chicken and cut into chunks or shred

Whisk ¼ cup pineapple juice (from chunks) with cornstarch and stir into the slow cooker

Cook on high for 30 minutes to thicken the sauce 

Return chicken to slow cooker along with drained pineapple chunks, stir until combined

What pairs well with sweet and sour chicken? 

A lot of people like to eat it just as it is, but you can also cook up rice or noodles and have that as a base as well. Brown rice or white rice will work and you can easily make that on the stovetop or in the microwave while this recipe is cooking in the crockpot. 

Can you freeze sweet and sour chicken?

You can. If you want to make up this batch of chicken and then freeze some for later, just separate it out and store however much you’d like to in the freezer.

When it’s time to eat and enjoy, you can unthaw in the crockpot slowly for a fast meal idea. 

What I love most about crockpot recipes is that you can even make breakfast ones overnight. What an awesome way to wake up to a hot and piping recipe without having to do any work that morning!

  • 1 ½ lbs boneless chicken breast
  • 2 carrots, chunks
