Slow Cooker Gumbo with Chicken and Chorizo
I love the flavor and taste of Gumbo. And since I live in the South, you can bet that Iโve had Gumbo just about every which way. It ranks up there pretty high as one of my favorite Southern recipes and after making it this way, I think you just might agree.
The chicken and chorizo combination creates a tender texture with just the right salty flavor. I also love adding in all the bell peppers and onions โ and donโt forget the okra!
I think that you can really jazz up and change Gumbo easily with just a few small recipe tweaks.
This recipe is great for a weekend at home or a fun gathering with friends. It cooks up quite a bit so youโll be able to share and still have some left!
Ingredients needed to make Crock Pot Gumbo
- 1 teaspoon olive oil
- 6 pieces of chicken, tenderloins
- 8 oz chorizo
- 1 yellow onion, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 rib celery, chopped
- 1 tablespoon garlic, minced
- 1 tablespoon flour
- 2 cups chicken broth
- 1 can diced tomatoes
- 1 teaspoon dry thyme
- Pinch cayenne
- โ cup rice
- 2 cups frozen or fresh corn
- 2 cups frozen or fresh okra
How to cook Gumbo in the Slow Cooker
Brown chicken in olive oil, remove from skillet and place in the slow cooker
In the same skillet cook chorizo with onion, bell peppers, celery, and garlic for about 4 minutes
Next, stir in flour, chicken broth, tomatoes, thyme, and cayenne and pour into cooker over chicken
Cook on low 4-5 hours
Stir in okra, corn, rice and cook for an additional hour
Garnish with parsley, serve and enjoy!
Is Gumbo spicy?
Typically, yes. Itโs a Southern food that packs a bit of that heat that makes your tastebuds dance just a little bit. However, if youโre not a fan of spicy, you donโt have to make it that way.
You can easily cut down on the added spicy ingredients to take it down for your flavor likes and wants. Some people like it even hotter which is always an option, too! Some brands of Chorizo is spicier than others as well.
Can you make Gumbo without rice?
You can but it is a big component of the recipe. If youโre not wanting to have rice mixed it, then you can always make it as a side offering that people can then add as they want. Many prefer a bit more rice, and it will stretch the meal farther. Just prepare your favorite rice and serve on the side.
What other meats can be added to Gumbo?
The great part about cooking up Gumbo is that itโs really quite the versatile recipe. You can add chicken and chorizo like the ingredients mention or you can add in shrimp and even alligator meat for a truly Southern experience.
