I’m all about the taste and texture of crunchy cucumbers. I actually just like slicing them up and grabbing a handful to eat as a snack. But when you combine them with all the other delicious ingredients that you need to make this salad, you’ll find that you might not want any other type of salad ever again. 

The key to making this simple cucumber salad? You have to slice them nice and thin. This makes certain that the marinade gets all over everything and adds that tasty flavor and taste. 

Do you peel cucumbers before eating them?

Some people do, some people don’t. I like to slice away part of the cucumber skin and leave part of it on there. It tends to help it hold its shape more as I’m slicing it.

No matter what, just be certain to wash the outside of the cucumber really well before cutting into it or eating.

I would actually recommend that to be the minimum amount of time. A couple of hours would be best and you’ll really notice a flavor difference, too.

Ingredients to make Salad Using Cucumbers and Tomatoes

  • 1 cucumber, small thin slices (2 if small)
  • ½ red onion, sliced thin and chopped
  • ½ pint grape tomatoes washed and cut in half
  • ¼ cup olive oil
  • ¼ cup balsamic vinegar
  • 1 teaspoon Italian seasoning
  • 1 tablespoon minced garlic
  • Salt & pepper to taste
  • Parmesan cheese, shredded – optional

How to make Cucumber and Tomato Salad

Cut your cucumbers and tomatoes.

Mix the dressing together.

In a large bowl, combine all ingredients and toss until well coated.

Allow marinating for about 30 minutes before serving if possible.

To me, this recipe just reminds me of summer. I always make this up for outdoor BBQ’s and gatherings and people love the flavor and taste. It’s light and refreshing and really, really flavorful.

The biggest thing to keep in mind with this salad recipe is that you need to cut the cucumbers and onions thin.

Also, make certain that you use a lot of dressing and allow it to marinate as well. Mix it up really well so that the flavors disperse evenly across the vegetables. 

If you’re lucky enough to grow your own onions and cucumbers in the garden, this salad is something that you can easily make without having to even run to the store! Fresh veggies are always better than store-bought!

How to store leftover cucumber and tomato salad

This is one recipe that will be better the next day! Storing it in the liquid and marinate will just keeping adding in a ton of flavor. And if I’m running low on cucumbers but still have some marinade left, I just slice up the cucumbers and add them directly to it to keep getting that flavor and taste.

This is a simple way to continue to make the salad over and over again.
