Corn Casserole is a popular side dish during a lot of the holidays but bring it out during the summer too.  Too early to talk about holidays?  They will be here before you know it.  It’s almost one of those dishes to set it and forget it.  No heating the oven.

Many will think of using the Slow Cooker more during the cooler months for all your favorite soups or chili, but it can save you time and your oven, all year long.  I’ve been cooking in the Crock Pot for a long time, and I love the ease of using this kitchen appliance. It’s a great way to add and let the slow cooker do all the work.

  • Frozen corn – You can use any variety of corn that you like. My favorite is white or shoepeg corn.  There’s even flavored corn like fire roasted for a different flavor.
  • Dry ranch seasoning – For flavor. 
  • Cream cheese – Cut the cheese into cubes so that it melts more easily in the crock pot. 
  • Bacon – Be sure to cook it crispy then chop it up prior to adding to the rest of the ingredients. 
  • Cheddar cheese – Freshly shredded cheese tastes best.
  • Salt and pepper (to taste)

How To Make Corn Casserole in the Crockpot

  1. Add the corn to the slow cooker and spread it into an even layer.
  2. Sprinkle dry ranch seasoning on top.
  3. Cut the cream cheese into cubes and place on top of the seasoning. 
  4. Turn the slow cooker on high and cook the ingredients for 1.5 hours. 
  5. Cook the bacon crispy and chop.
  6. Shred the cheese if needed. 
  7. After 1.5 hours, stir the corn mixture
  8. Stir in cheese and top with bacon. 
  9. Cook for an additional 15 – 20 minutes to melt the cheese.
  10. Stir all the ingredients together and serve. 

You can easily prepare this ahead of time.

Change it Up

Add heat – If you want to make this dish spicy, let each person do that to their own individual serving. Adding a little bit of hot sauce or cayenne pepper is a simple way to accomplish that. 

Add toppings – Fresh chives or parsley make delicious topping options for this dish.   Plus adding a bit of color to your dish.  Love bacon – add a few more bacon bits.

Common Questions About This Corn Casserole

Can I use fresh corn? 

If. you want to use fresh corn for this simple recipe, you can! But keep in mind that fresh corn can release excess liquid and break apart some, so this is why adding frozen corn gives the dish a bit more structure.

Also, give it time to release some of that liquid so that you can drain it away. This does take extra time, but it’s worth it not to have a watery casserole. 

Can I make this in the oven? 

You can make this recipe in the oven. You’ll need to adjust the cooking time, so be sure that the entire casserole heats all the way through.   I would suggest about 30 – 40 minutes at 350.

Prepare the recipe the same way as written, just use the oven instead of the slow cooker. 

What main dishes pair well with corn casserole? 

Just about anything! I love making Marinated Grilled Chicken Breasts and then pairing a big heaping of this side dish. 

Corn is just one of those staple dishes which most everyone loves.

Can I use pre-shredded cheese?

Yes you can.  I do keep this on hand, but prefer to shred my own when I can.

Cook Time 1 hour 45 minutes
Total Time 1 hour 55 minutes

Ingredients

  • 32 oz bag frozen corn
  • 1 oz packet dry ranch seasoning
  • 8 oz cream cheese, cut into cubes
  • 6 slices bacon, chopped into 1/2 inch slices and cooked
  • 1 cup cheddar cheese, freshly shredded
  • salt and pepper (to taste)
