Slow Cooker Teriyaki Chicken With Broccoli

When it comes to making a plan for dinner, this simple crockpot chicken recipe can take away all the stress. I love how this recipe is just 5 easy ingredients that just require you to do minimal prep and let the crockpot take over and do all the work. 

Just think about all the things that you can get done while the chicken is cooking perfectly on its own!

Ingredients needed to cook Crockpot Chicken

  • 2 lbs skinless boneless chicken breast
  • 1 bottle teriyaki marinade
  • 1 head fresh broccoli, trimmed to florets
  • ½ cup carrots, shredded/matchstick
  • Cooked rice for serving

How to cook chicken in the slow cooker

Place ¼ cup of marinade in the bottom of the slow cooker.

Lay chicken on top of the marinade.

Pour remaining sauce over the chicken.

Cook on low 4-6 hours until chicken is tender.

At the last 30 minutes, add broccoli and carrots on top of the chicken and continue cooking just until tender.

Serve over cooked rice and enjoy!

How do you know when chicken is done cooking in the crockpot?

The safest way to know when chicken is done cooking is to use a meat thermometer and check the temperature. Chicken needs to be at a temp or at least 165 degrees internally for it to be considered safe to consume. 

And I will say that investing in a meat thermometer is a great investment as it’s one thing that you’ll want to use over and over again. 

 How to know if broccoli is done cooking?

If you’re wondering if your broccoli is done baking, there are a few ways to tell. Broccoli will get softer in texture as it cooks. You can also notice that the broccoli is cooking by looking at the green coloring. As it steams, it’s going to be a brighter green in color.

Keep in mind that even if your broccoli doesn’t get cooked completely all the way, it’s still good to eat! That just means that it’ll have a bit more of a crunch, so don’t overly stress out about it. The doneness texture of broccoli can be a preference.  I like a little crunch to mine.

How to store leftover crockpot chicken

If you’re lucky enough to have leftovers, just put them in a container with a lid and store them in the fridge. You can store it all together (the chicken and the broccoli) or you can separate them into different containers as well. It’s entirely up to you. 

How to reheat chicken

There are a few ways that you can reheat chicken so it just depends on your timeframe and process. The microwave is going to be the quickest way to reheat chicken but it’ll also zap it fast and can dry it out if you’re not careful. 

The other method for reheating chicken is to add it back to your slow cooker to reheat or heat it slow and slow in the oven.
